Tis the season for cobbler. The fruit is ripe, the picnic table is set (unless you live in Oklahoma where it's one hundred billion degrees) and the farmer's market has what you need. I realized that this isnʼt the first cobbler recipe posted here. I just love it so much I had to share another easy way to prepare it.
If you donʼt want to make it with peaches it would be wonderful with plums or a mixture of blackberries and raspberries. Really, any summer fruit would be wonderful.
Now, just so you know…this cobbler has a much more cake-y batter than a traditional biscuit type cobbler. Now that I've given you the disclaimer, here we go.
- 5-6 peaches, peeled and cut into bite size pieces
- 1 cup Aunt Jemima Buttermilk pancake mix
- 1 1/2 to 2 cups water
- 4-5 Tbs. butter juice from one lemon
- 1/2 cup sugar
- 1 tsp. baking powder
- 1 tsp. garam masala
- Preheat oven to 350 dgerees
- Combine peaches, lemon juice and 1/4 cup sugar in a pot and simmer on stove until peaches are just soft (about 15 minutes.)
- Place butter in a baking dish and put into preheated oven to melt butter.
- Meanwhile combine pancake mix, water, 1/4 cup sugar, baking powder and garam masala. Don't add the water all at once. Add enough to give you a thick pancake batter consistency.
- Pour the batter into the baking dish with the melted butter.
- Pour the fruit on top of that.
- Bake for 45 minutes or until golden brown.
- Best served warm with ice cream.
