Frozen Treats

I love food, but in the summer, I really hate to cook. Turning on the stove heats up the house, so I avoid it at all costs. I’ve been experimenting with crock-pot cooking, which has some successes and failures. Who wants to eat hot food when it's all you can do to keep cool? Sometimes it’s just easier to throw in the towel and eat dessert first.

And summertime is great for frozen treats when it comes to dessert, and homemade frozen treats are just too easy to make. Here are three awesomely easy treats we’re enjoying this summer:

Watermelon Granita

Ingredients: Seedless watermelon, lime, honey or agave nectar.
Directions: chunk about half of a seedless watermelon and puree until smooth in a blender with the juice of a lime (include pulp) and about a tablespoon of honey or agave (more if you prefer sweeter) in batches. Pour into a 9×13 pan and place in freezer. Use fork to break up ice crystals as they form until you have a pan filled with icy crystals. Enjoy as-is or in a frozen cocktail (grown ups only, of course!).

Pudding Pops

Ingredients: instant pudding, milk
Directions: Make pudding according to directions, pour into popsicle molds or small paper cups and insert popsicle sticks. Freeze and enjoy. Layer flavors for even more delicious fun!

Frozen Grapes

Ingredients: Grapes
Directions: Buy grapes. Wash grapes. Freeze grapes. Eat grapes. So good, so easy, so refreshing.
