There are times when dinner rolls around and I just don't have anything planned or have run out of energy or enthusiasm. These days also happen to fall on times when I haven't been to the store in a while and have no idea what to fix. That's when I pull out the eggs, pancake mix and declare "breakfast for dinner!"
These spiced apples are so easy to make and give the impression that you put some thought into dinner plans. They also go well on top of pancakes, biscuits or just on their own.
Ingredients:
- 3-4 apples, peeled, cored and coarsely chopped
- juice from 1 lemon
- 1/4 cup dried cranberries
- 2 Tbs. honey
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- pinch of ground cloves
- pinch of ground ginger
- 1/4 tsp. vanilla extract
Combine everything in a saucepan. Simmer for 15 minutes or until apples begin to soften.
