Berry Crumble

Mid summer and the berries are in abundance!  Blueberries, blackberries and raspberries, oh my!  This is a great recipe when berries are on sale at Sprouts. Sometimes they have them as low as two packages for $3.  How can you pass that up?!

Berry mixture

  • 4 – 6 oz. packages of berries (blackberry, blueberry, raspberry and/or strawberries)
  • juice from 1 lemon
  • 1 Tbs. sugar
  • 1 Tbs. tapioca

Mix first four ingredients and set aside.

Topping

  • 1/2 cup oats
  • 1/2 cup chopped pecans
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1/2 cup almond meal
  • 1 Tbs. wheat germ
  • 6 Tbs. cold butter
  • 1 tsp. nutmeg
  • 1 tsp. cinnamon
  • dash of salt

Combine dry ingredients and cut butter into the mixture with a pastry cutter or forks.

Pour berry mixture into a 8×8 greased pan.  Top with oat mixture.  Bake at 350 degrees for 50 – 55 minutes.  Serve over vanilla ice cream.
