Sweet & Spicy Pasta

This recipe was born out of the need to make dinner with whatever I had in the pantry. The one thing I bought at the store with intention but without a plan was sweet Italian turkey sausage. My family is in love with this sausage. It is super flavorful and very versatile. My husband and I also love it because it is a healthier version of traditional sausage. The night I made this dish I went to my pantry to find a can of diced tomatoes but only came up with a can of mild Rotel. I wasn't certain that something meant for Mexican food would go well with Italian flavors but I didn't have much of a choice. Surprisingly it was a hit. The turkey sausage offered a rich, sweet flavor while the Rotel added just a touch of spice. The other great thing about this was that it was quick and easy to make.

Ingredients

Honeysuckle brand sweet Italian turkey sausage

1/2 package bow tie pasta

1 can mild Rotel tomatoes and green chilies

2 Tbs. olive oil

sea salt

Directions

Cook bow tie pasta until al dente.

Heat olive oil in a large skillet.  Remove ground turkey from casings and break apart with a spatula. Brown in skillet until completely cooked through. Add Rotel and combine. 

Drain pasta and add to skillet.  When ready to serve sprinkle with sea salt.
