Pumpkin Spice Molasses Cookie Recipe

The last thing you need right now is another cookie recipe this time of year. Between the magazines at the check out stand, Pinterest and Facebook there are about 12,000 different and amazing cookie recipes. That being said, here is another amazing cookie recipe. This one is special because the chips are seasonal and can only be found between Halloween and Christmas. These amazing little morsels of holiday goodness are Nestle Toll House Pumpkin Spice baking chips. Next time you are at the grocery store pick up a few packages because they won’t be around for long.

Pumpkin Spice Molasses Cookies

2 1/3 cups flour

2 tsp. baking soda

1/2 tsp. salt

1/2 tsp. cinnamon

1/4 tsp. ground ginger

1/4 tsp. ground nutmeg

Combine first 6 ingredients and set aside.

 

1 cup sugar

1 stick butter (softened)

Combine sugar and butter in electric mixer until creamed together.

2/3 cup pumpkin puree

1/4 cup molasses

1 tsp. vanilla extract

1/4 tsp. maple extract

1 egg

Add pumpkin, molasses, extracts and egg to sugar/butter. Combine.

Add flower mixture in batches until thoroughly combined.

Stir in 1 bag Nestle Toll House Pumpkin Spice chips.

Refrigerate cookie dough for 45 minutes.

Preheat oven to 350 and line a baking sheet with parchment paper.

Sprinkle raw sugar on a small plate.

Using a tablespoon, spoon out batter and roll into balls between the palms of your hands. Roll the cookie dough ball in raw sugar and set on parchment with 2 inches in-between each cookie. Bake at 350 for 11-13 minutes.
