I love using ready made pancake mix. You purists can scoff, but I love me some Aunt Jemima. My mom insists that it's just as easy to measure out flour, baking soda, sugar, water and a pinch of salt. However, should it come down to a pancake race, my money is on my quick pour-and-stir reflexes.
One time I made pancakes from scratch using a Pioneer Woman recipe and my son's response was…"What is wrong with these pancakes?" Since then I have been faithful to Aunt Jemima.
However, plain pancakes can get a little boring after a while, so I try to mix it up a bit by adding different flavors. It keeps the magic in our relationship alive.
Ingredients:
- 2 cups Aunt Jemima Buttermilk Complete pancake mix*
- 1 1/2 cups water (approx. add more if you need a thinner batter)
- 1 ripe banana, smashed
- 1 cup cinnamon flavored apple sauce**
- 2 Tbs. wheat germ
Ingredients:
- Mix everything together and make pancakes. It's that easy!
*If you are going to use pancake mix, make sure you get the kind that says all you have to add is water. KISS those pancakes: Keep It Simple Stupid.
**I like Sprouts brand cinnamon applesauce. It is very cinnamon-y.
