½ lb pork sausage
2 T olive oil
3 medium potatoes, cubed
1 onion, chopped
7 eggs
½ C milk
Salt and pepper
Chives
½ C grated cheddar cheese
Preheat oven to 375º.
Using
a 12” oven-proof skillet, cook sausage; break apart while cooking. Add
sprinkle of red pepper flakes. Remove from skillet and drain. Add olive
oil to skillet and heat. Add potatoes and cook 3-4 minutes. Add chopped
onion and cook 5 minutes, until it starts to soften. Reduce heat and
cover, cooking until potatoes are tender (about 10 minutes). Remove the
lid, turn up the heat, and brown the potatoes for about 5 minutes.
While
potatoes are cooking, crack eggs into a large bowl; add milk, season
with salt and pepper. Add cheese and mix well with whisk. Stir sausage
into potatoes. Pour the egg mixture evenly over potatoes and sausage
and shake to distribute. Sprinkle with chives and put pan in oven. Cook
15 minutes or until puffy and set. (Give the pan a little jiggle to
make sure it is set.) Turn onto cutting board or platter and let cool.
Cut into wedges and serve.
