Meatloaf

1 ½ - 2 lbs ground beef
½ lb pork sausage
2 eggs
½ C milk
½ C onion, finely diced
¼ C shredded carrot
¼ C green pepper, finely diced
¼ C dry bread crumbs
¼ C oatmeal
1-2 T parsley
1 t garlic salt
½ t ground sage
1-2 T ketchup
1 t black pepper
 
Preheat oven to 350. Mix beef and sausage in a large bowl. Combine milk and egg. Add other ingredients to meat and then add egg mixture. Do not over mix. Place in a 9” x 5” x 3” pan. Bake 1 hour 20 minutes and then drain off any fat. Top with ketchup mixture below and continue baking 15-30 minutes. (Cooked meatloaf should be 170 degrees in the center.)
 
Meat loaf Topper
¼ C ketchup
1/3 C brown sugar
1 ½ t dry mustard
Cayenne pepper, optional
 
Mix together and top meatloaf. I like to save some to use at the table.
Note: This recipe offers a good opportunity to combine grated veggies like carrots and zucchini with the meat. I sometimes put diced jalapenos and a dash of cayenne pepper into the mixture for a little kick.
