Tasty Teriyaki Tilapia

I'm continuing my mission to serve more fruits and veggies at dinner time and less carbs. So far so good. We haven't had pasta, rice or bread at dinner in about a month. (Although I have snuck in the pasta when my husband was out of town. Shhhhhh, don't say anything) 

In place of the carbs, I have just served up more fresh veggies. My oldest isn't to thrilled about it, but I don't really care. In an effort to make the veggies a little more interesting for all of us, I have been sautéing them in Teriyaki sauce. I've tried a lot of different brands and I've decided on my favorite—Veri Veri Teriyaki by Soy Vay. I originally picked up this sauce because the brand name made me smile. (A Chinese food staple with a Jewish play on words, I loved it!) Turns out this sauce is awesome.

Right now my favorite use for Teriyaki sauce is on fish. Fish is the perfect protein when trying to eat healthy…however, fresh wild caught Salmon can be a little stressful on the budget at upwards of $14 per pound.  Yikes. I would love to eat more salmon, but most of the time I need to find a budget-friendly fish. 

Tilapia is where it's at. The frozen fillets thaw in about 10 minutes in room temp water and cook in about 8 minutes. Another reason I love Tilapia is because the flavor is very mild, so my picky eater had no problem cleaning his plate.

Here is a quick and easy method for Tasty Teriyaki Tilapia

  • Preheat oven to 375 degrees
  • If using frozen fillets, place individually wrapped fillets in sink and fill half way with room temp water.  Fillets should thaw in about 10-15 minutes.
  • Line baking sheet with foil and spray with non-stick cooking spray. 
  • Arrange fillets on sheet in a single layer.
  • Generously brush teriyaki sauce on fillets.
  • Bake for 8-10 minutes or until thickest part of the fish is flaky.
